Yummy Pumpkin Seeds

With a plethora of pumpkin carving and crafting going on this month, it’s no wonder people are crying out for a new use for their pumpkin seeds!

 

Here’s a great recipe for roasted pumpkin seeds:

 

1/2 cup of pumpkin seeds

2 tsp of honey

1 tsp of coconut oil (melted)

1/4 tsp sea salt

 

Take your handfuls of ‘leftover’ seeds, rinse and blot them dry. Let them air dry overnight for a few hours or overnight. Once they are dry, put them in a bowl. Preheat the oven to 300 degrees. Add honey, coconut oil and salt to the bowl and stir all ingredients together in the bowl.

 

Line a baking tray with foil and pour the seeds onto the tray. Pop them in the oven for 30 minutes at 300 degrees. When they come out of the oven, sprinkle with a little salt.
