The humble cauliflower
The humble cauliflower, known in my grandmother’s household for being smothered in cheese sauce, is dusting off its tap shoes to become the IT veg of the next few months. It’s certainly giving us London event caterers some inspiration for our menus.
It’s officially having a glamorous makeover and is showing itself as one of the vegetable pack. It’s being roasted (whole and served in its full leaf clad beauty), sliced and named a steak (to appease the carnivores among us), puréed and mashed into cakes served with poached eggs and Viking salt (another new fav of ours) and blitzed into cauli-bulgar (fast becoming a wheat-free and health conscious cult).
Of course as with many food trends, our rooted white friend is popping up everywhere, from the devoured pages of the lovely Hemsley sisters’ cookbook to the piggy salt dust at the Superba Snack Bar and the sharing tables at Ottolenghi where it is roasted whole and served with spiced crème fraîche.
Gosh, we are just in love! We are already busy thinking about how we can nestle this British wonder into our wedding menus and feasting platters. And thanks to the lovely people at Foursquare, we can try it out at some of the best restaurants across London.
